Beef Roastis a Patatas
(Prep & cooking time: 40 minutes)
Start out by slicing potatoes into equal wedges or cubes,
put in large bowl and add olive oil and spices to taste
(salt, pepper, parsley, garlic). Place in 400 degree over
and roast until golden brown turning potatoes every 6-7
minutes for even cooking and browning.
In a large sauté pan over high heat using a mix
of butter and olive oil, add beef filets browning both sides.
Remove filets once done to taste (medium is best). Remove
beef and set aside. To the remaining fat in the pan stir
flour, then add dried beef bouillon, red wine and a bit
of tomato paste. Bring to a boil and stir until thickened.
Add garlic, salt, thyme and pepper.
Using a large pan on high medium to heat, sauté
thinly sliced onions in a mix of olive oil and butter seasoning
only with salt and pepper.
Assemble all items on a plate, top the beef filets with
the bourguignon sauce and garnish with fresh parsley.
